As I understand it:

Break point is decided from the beginning of combat.

Combat is selection with replacement.
ie, if you have 20 soldiers and 1 noble, it is possible (although HIGHLY
unlikely) that your noble could be selected to attack multiple times. The
reverse is true as well, your noble may never get selected to attack.

Peasants sailors and workers can be selected as targets, only if their
stack is the defenders.
