This sounds like a good idea, as gives something to do with large number
of workers once the castle is completed. I would worry that any income
could be to much however. One reason the garrison incomes were reduced
was in G1 everyone had large surpluses of cash after only a few turns.

Allowing new forms of income that does not require noble time could
unbalance the game. If the income generated would be bound to a noble
and the noble had to have the craftsmen in his employ to use that might
work. The craftman would have to be paid even if not in a city etc.

Maybe something like a craftsman can generate 1 gold / week and costs 3
gold to maintain. There is no top end to this but requires almost
complete dedication of a noble.

I'm sure this could start generating lots of gold if handled correctly.
So do we want to even think about it?

The only positive thing I see in the "unclaim gold" option would be the
less of a plunder target. I don't think that is enough of a reason
however to suggest this as a good idea. As mentioned by others, it
should require some planning to maintain your nobles etc. And further
small sums are always available due to the 25gold deposit / turn.
Save it up, some day you will have the ability to do what you want. And
again as you mentioned the advanced magic works with gold also.
