Yes.

No. If you are attacking and you have peasants/workers, they act like
other non-combat possessions such as horses. If you lose, 100% of the
peasants/workers will be captured.

Dead people aren't valid.

Good question. I'd be that the modified values are used, but we have
never tested that very well. Few battles are that close.
